Let's start by talking about the gin in this punch. For us, it has to be Café Del Mar Gin, Craft Gin Club's July 2024 Gin of the Month.
Made by the amazing team at Ibiza's world-renowned Café Del Mar bar, this fabulous spirit is a summery bouquet of blood orange, rose, and hibiscus tones that work so well with berry and rhubarb flavours like the ones in this cocktail recipe.
Here, those rhubarb and raspberry tones come from a delicious, quick-to-make homemade syrup created by simmering fresh raspberries and rhubarb with a touch of lemon and water.
Once made, this syrup delivers a punchy hit of sweet-tart rhubarb tones full of nostalgia and abundant, fresh, juicy raspberry flavours that are simply divine. It really is a true taste of the English countryside in summer!
Fresh lime juice then elevates every sip with its zesty, citrusy fragrance and soda water rounds everything out wonderfully with this effervescent and refreshing bubbles.
Finished with fresh raspberries and a sprig of basil or mint, there's no better cocktail for sipping through summer with your favourite cocktail fans.
Raspberry & Rhubarb Gin Punch
500ml Café Del Mar Gin
500ml homemade raspberry and rhubarb syrup (see below for the recipe)
120ml fresh lime juice
1L soda water
Fresh raspberries, to garnish
Fresh mint or basil, to garnish
To make the syrup, bring 250g chopped rhubarb, 125g raspberries, 200g sugar, the juice of half a lemon and 500ml water to a boil and simmer for 15 minutes. Take off the heat and leave to infuse until it is cooled completely. Strain through a sieve and you are good to go!
For the cocktail, add the gin, syrup and lime juice to a jug with lots of ice and stir well. Add the soda water and garnishes and stir again. Serve and enjoy!
