Pomegranate Gin Sour: a contemporary take on a classic cocktail
If you like a Clover Club, you’ll love this cocktail! It’s smooth, with a velvety mouthfeel and a pleasant mix of citrus and tart fruitiness on the palate thanks to the grenadine - that’s pomegranate-flavoured cocktail syrup.
Pomegranate Gin Sour
60ml gin
20ml grenadine
30ml lemon juice
1 egg white
2 dashes of Angostura bitters (optional)

Add your first four ingredients to a shaker without ice and shake well for 10 seconds. Open the shaker and add ice, then shake again for another 10 seconds. You want to make the shaking quite vigorous so that the egg white turns into a beautiful pillowy foam. The outside of the shaker should be cold to the touch.
If you wish, you can add a couple of dashes of Angostura bitters to the top of your foamy cocktail. Twist the peel of a lemon over the top of the drink and then discard before serving.
