Here at Craft Gin Club, we love to put an interesting spin on a well-loved, ginny cocktail classic. We’re transforming the Gin Fizz with zesty lime juice, sweet and boozy limoncello and a herbaceous sprig of mint or thyme! A treat for the senses, the Limoncello Gin Fizz is the perfect antidote to lockdown blues and is, simply, the most beautiful gin o’clock tipple!
Limoncello Gin Fizz
45ml gin
15ml limoncello
15ml freshly squeezed lime juice (or lemon, for a slightly tarter drink)
Dash of simple syrup, to taste
2 fresh mint or thyme sprigs, to garnish
Sparkling water, to top up
Fill a mixing glass with ice and add your gin, limoncello, lime juice, simple syrup and thyme or mint sprigs. Stir to combine and cool, then strain into a rocks glass over ice and top with sparkling water. For an extra refreshing, long drink in hot summer weather, we also love this served over crushed ice in a highball glass.
