As spring bursts into bloom, bees are hard at work collecting the nectar they use to produce the golden honey which made the Dodd’s Limited Edition Gin in our April ‘19 Gin of the Month box so delightful. Try these three mouthwatering gin tipples inspired by bees and blossoms!

Honey Rose Martini

50ml gin
25ml vermouth
Dash of bitters
10ml rose and honey syrup*
Rose petals, to garnish

Combine the gin, vermouth, bitters and rose and honey syrup in a cocktail shaker packed with ice. Shake for 30 seconds. Strain into a martini or coupe glass, garnish and serve.

*To make the rose and honey syrup, add equal parts honey and rose water to a saucepan. Allow the honey to dissolve over medium heat, before removing and allowing to cool.

Chamomile Hot Toddy

1 chamomile teabag
1 cup of water
1 tbsp honey
50ml gin
25ml lemon juice
Chamomile flowers, to garnish

In a saucepan, brew your chamomile tea. Discard the teabags and stir in your honey. Remove from heat and add the gin and lemon juice. Garnish and serve immediately.

Bees Knees

50ml Gin
2 tsp honey
20ml fresh lemon juice
20ml fresh orange juice
Orange zest twist, to garnish

Add gin and honey to a shaker and stir until the honey dissolves. Add the lemon and orange juice and top up with ice. Shake well. Strain into a martini glass. Garnish with an orange zest twist.

Lavender Bees Knees

50ml gin
25ml lavender simple syrup*
1 tsp honey
15ml freshly-squeezed lemon juice

Combine 250ml of water and 250g sugar in a saucepan over medium heat, dropping in a few sprigs of fresh or dried lavender. Simmer until the consistency of a syrup, then strain. In a shaker packed with ice, combine all of your ingredients. Shake, strain into a cocktail coupe and enjoy!

Sparkling Bees Knees

35ml gin
20ml honey
20ml lemon juice
70ml Champagne or sparkling wine

Combine the gin, honey and lemon juice in a cocktail shaker filled with ice. Shake for 20 seconds. Strain into a coupe and top up with Champagne.
