Let’s be honest, who doesn’t love a Bellini? Juicy, sweet peaches and sparkling prosecco - it’s a winner, whatever the occasion! But you know what makes this top tipple even more delicious? Yep, you got it - gin!

This incredibly simple cocktail requires just three ingredients and absolutely no bartending skills! And yet somehow, it looks and tastes super special - basically, it’s the ideal way to transform another boring night at home into a really special treat!

We’ve suggested using tinned peaches in syrup as, at the time of writing, this tinned fruit is something a lot of us might find easier to get our hands on rather than fresh fruit. Of course, if you can get your hands on a peach, then the fresh fruit could be used too - in which case, you might want to add a small teaspoon of caster sugar to the mixture, just to give it a little more texture.

One final tip: make sure your prosecco (or Champagne/sparkling wine, depending on how fancy you’re feeling) is really, really cold before you use it, as the cocktail doesn’t include any ice apart from the cubes used to make the peach purée. Chilling your prosecco for at least half an hour before you’re serving the drinks will make all the difference!

Peach flavored cocktail

Peachy Gin Bellini

20ml gin
3 tinned peach slices in syrup
Prosecco, to top up

Glassware: Flute or wine glass

Add the gin and the peach slices to a blender or food processor and blend until you have a smooth puree. If your blender allows, add three ice cubes and blend further; alternatively, stir or shake the purée with three ice cubes until it is chilled and the ice is dissolving into the mixture. Now add the mixture into a flute or wine glass and top up with chilled prosecco. (You could strain the puree into the glass if it’s a little lumpy!)
