If you like hot chocolate and gin and cream liqueur and amaretto and roast marshmallows then you are going to adore this indulgent and oh-so-delicious boozy hot chocolate recipe.

For this recipe, we recommend using Downpour Coast & Croft Gin, Craft Gin Club’s November 2022 Gin of the Month.

It has a moreish, savoury mix of wild thyme, citrus and umami-rich pepper dulse tones that contrast and complement the luscious cream liqueur, sweet chocolate and marshmallow, and nutty amaretto delightfully, adding layers of delicious complexity to every sip.

The roasted marshmallow then adds smoky, charred, caramel notes that are so fun and scrumptious. It’s a must-try!

Boozy Roast Marshmallow Hot Chocolate

Baileys hot chocolate

Serves two
50ml Downpour Coast & Croft Gin per mug
25ml Baileys per mug
25ml amaretto per mug
400ml milk or vegan alternative (ideally full-fat but semi-skinned works too)
75g chocolate (the same quantity of powdered drinking chocolate works too)
A handful of marshmallows per mug
Melted chocolate, to garnish (optional)

Add the milk and chocolate to a pan on medium heat and stir until the chocolate has fully melted (or dissolved if using powder). Pour into your mug and stir in the gin, Baileys and amaretto. Add the marshmallows on top. Roast using a kitchen blow torch. Finish with melted chocolate, if using. Enjoy!

If you don’t have a blow torch, place the marshmallows on a grease-proof paper-lined baking tray and put them under a hot grill. Once coloured, spoon it onto your hot chocolate.
