We can’t get enough of passion fruit here at Craft Gin Club, so we’ve been making this easy gin cocktail to get us in the spring and summer mood! If you adore the flavour of tart and sweet passion fruit, and are partial to a passion fruit cocktail (or three) then you’ve got to check out our 3-ingredient how to make your own passion fruit gin. This tasty cocktail was developed for Craft Gin Club by Jonathan and Deborah Thompson, a husband-and-wife team who work together on the blog Salted Mint. It looks like an impressive gin cocktail, and you don’t even need a cocktail shaker to make it!

This delectable gin cocktail is full of yummy fruit flavours (who knew strawberry and passion fruit made such a dreamy combo?) and has a tropical vibe thanks to the coconut water and fresh passion fruit juice.

We love the refreshing finish - and it’s all down to the fresh lime juice and mint. It’s lip-smackingly good… so whip up their wondrous cocktail using the recipe below! Cheers.

Strawberry Passion Fruit Crush

Fruity cocktail with passion fruit and strawberry

1tsp honey
8 fresh mint leaves
Half of a lime, quartered
75ml passion fruit juice (from 1 large passionfruit)
75ml coconut water
50ml gin
Sparkling water, to top up
2 sliced strawberries, to garnish

Begin by making a honey syrup. Bring 250ml of water to the boil in a saucepan. Remove from the heat, add the honey and stir until well-mixed. Pour your syrup into a pitcher or a glass or cool.

In a tall glass, muddle the lime and mint leaves with your now-cool syrup – this will sweeten the drink, so adjust the levels to your taste, but 15ml is a good place to start. Add ice, then the passion fruit juice, coconut water and gin. Gently mix to combine.

Pour sparkling water over the top until the glass is three-quarters full. Garnish with sliced strawberries and mint.
