We love the fancy names that innovative bartenders have given really simple drinks over the years. Fancy a gin with lime cordial? That will be a Gin Gimlet, then! How about a vodka with orange juice? Oh, you mean a Screwdriver! And here’s one of our favourites: the Greyhound, otherwise known as a gin and grapefruit juice!

Here, we’ve taken this classic two-ingredient cocktail and elevated it to something even more delicious with the addition of an easy-to-make rosemary syrup and a little sparkling soda water. (And yes, the syrup really is very quick and easy to do - just sugar, water and rosemary.) Chin chin!

Rosemary Greyhound

60ml grapefruit juice (ideally freshly squeezed)*
60ml gin (Old Tom is preferable)
15ml rosemary syrup*
Soda water, to top up
Fresh grapefruit wedge, to garnish
Rosemary sprig, to garnish

*For the rosemary syrup:
3 rosemary sprigs
200g sugar
200ml water

*You can use pink, yellow or ruby grapefruit for this cocktail. Pink fruits tend to be sweeter than the tart, almost sour yellow grapefruit, so you might want to add more or less rosemary syrup to get the balance of flavours you prefer depending on the fruit you choose.

First, make your rosemary syrup: in a small saucepan over low heat, combine the sugar, water and rosemary and stir gently until the sugar has dissolved. Strain into a resealable container and allow the liquid to cool fully before using in your drink. Leftover syrup can be stored in the fridge.

To make your drink, fill a gin glass with ice, then add the grapefruit juice, 30ml of the rosemary syrup and your gin. Mix gently to combine. Top up with soda water. Garnish with a wedge of grapefruit and sprig of rosemary to serve.
